In the mid 18th century, a great earthquake nearly destroyed a large chunk of Libson, Portugal. Fortunately, the region of Mouaria survived, keeping Portugal's cultural heritage in tact thanks to a young boy's pet rooster, who, according to legend, magically transformed into a statue that brought luck and protection to the area during the tumultuous catastrophe. And like that feathered bearer of good fortune, Iberian Rooster also seeks to keep the torch of Portugal's legacy burning bright—particularly its culinary legacy.
To that end, the chefs here prepare a lineup of classic dishes from the Iberian peninsula, whipping up the likes of Macanese pan seared duck alongside fish croquettes. But that being said, the cooks don't bind themselves to tradition too tightly, also roping in creative fusion techniques from other cuisines and cultures. This embracement of other cooking styles results in inventive mashups like chimichurri morrocan beef, a Brazilian burger with havati cheese and braised pork belly, and a hotchee dog—an all beef frank topped with shredded cheddar, mashed potatoes, and a sunny-side up egg, among other unique ingredients.
