The ramen at Tajima has quickly become a must-try dish in San Diego. Zagat spotlighted the chain's curry ramen on its list of unique ramen creations around the city, and Pacific magazine raved about the vegan bowl, which incorporates mushrooms, asparagus, and tofu into each tasty bite.
Noodles, of course, are at the heart of every ramen dish—and Tajima does not take that fact lightly. The noodles here are renowned for their firm, springy nature, which Tajima achieves by using several types of flour and water with a perfect pH level. Tajima also recognizes that certain noodles go with certain broths, so chefs make it a point to pair the two sides precisely, rather than making some wild, inedible concoction such as spaghetti and marinara sauce.
