Located in a former warehouse in the heart of San Francisco, Seven Stills provides a suitably industrial backdrop for the hard work taking place within. Here, brewers and distillers work in tandem toward a shared goal: concocting artisanal, small-batch whiskeys out of equally well-made craft beers. In addition to this delicious science experiment, they also use their copper still—purportedly the largest in San Francisco—to make vodka and a handful of other creations. Read on to learn more:
Whiskeys: Seven Stills' whiskey begins its life as a familiar, if unorthodox, raw material: craft beer. From there, the team works its magic, distilling the brew into complex whiskeys that retain some of the beer's character. Try the Whipnose (made from a coffee porter) or the Chocasmoke (made from a chocolate oatmeal stout).
Vodka: Made from 100% GMO-free organic corn, California Courage vodka goes through the distillation process seven times, including a final stint within the distillery's signature copper pot. The result? A spirit renowned for its creamy smoothness.
Liqueurs: Seven Stills also produces liqueurs such as the Cannella Amaro and the Cannella Cinnamon Cordial, which is made with a blend of four types of cinnamon.
Bitters: Bitters are the secret ingredient that takes many cocktails from good to transcendent. Seven Stills' line showcases prominent flavors ranging from prickly pear to cranberry.
