"Vom Fass" is German for "from the cask," so perhaps the shop's method for serving samples of its natural and organic vinegars shouldn't be a surprise. The team pours the samples from over 75 vacuum-sealed wooden casks and clay amphora, which keep the oils fresh—the better to taste the subtleties of avocado oil or orange-infused EVOO.
Visitors can also taste from over 35 fruit balsamic vinegars, in flavors like apple, cranberry, and date. These, too, hail from wooden casks; they're made from cask-aged fruit wine. Assorted specialty foods complement the oils and vinegars, such as olives, tapenades, and chutneys.
