Yu Xin Hou (also known as Wendy) owned a restaurant in Shiyan, located in the northwest of China's Hubei province, for years, but then life gave her a detour. She moved to the US and for two decades worked as a massage therapist, all the while hoping to one day open a restaurant again. And then that day came. She bought an A-frame building that once housed a Wienerschnitzel, painted it bright orange, and opened Eastern Spice. Today, she specializes in jian bing (or "savory Chinese crepes"), which are a classic Chinese street food that combine wheat and mung-bean-flour crepes with cilantro, eggs, and fried cruller.
