Three brothers and a cousin founded 40tude Bistro & Bar out of a desire to share their brand of Filipino cuisine with sushi and Chinese selections. Their sushi menu brings Japanese culinary techniques to the table, but the bistro makes a departure from expected fare with its Filipino silog entrees. Centered around rice and a fried egg, the silog highlights various proteins, including pork belly and chicken liver hash in the sislog, fried milkfish in the babybangusilog, and American lunch meat in the spamsilog. Chefs pay homage to American favorites in other ways as well with dishes such as meatloaf and deep-fried chicken.
