Four Things to Know About Flying Squirrel Pizza Co.
The former bassist for Seattle band Visqueen, Bill Coury now applies his knack for harmony toward creating rich polyphonies of flavor at Flying Squirrel Pizza Co.. Here are some things to keep in mind while enjoying a slice:
- Their ingredients hail from local merchants. Flying Squirrel sources fresh veggies from nearby farms, while its meats arrive from Seattle favorites like Zoe's Meats and Salumi Artisan Cured Meats.
- They make their own sausage. Using hormone-free pork from Idaho and hormone-free chicken from Washington's Draper Farms, Flying Squirrel handcrafts sausages that the The Seattle Times calls “divine.”
- Their crusts accommodate most diets. Along with making a dairy-free crust daily, Flying Squirrel supplies personal 10-inch gluten-free versions of most of its pies, all available at $5 off the listed price.
- The soundtrack is all cassette tapes all the time. Cassette mixtapes made by employees and customers alike dominate the soundtrack at each location. Visitors who donate their own mixtape for Flying Squirrel’s wall receive a 10% discount.
