While walking near the corner of Fremont and Ballard, passersby might catch an unfamiliar, yet enticing scent. It could be a fresh batch of perfume cooling on a windowsill, but it’s more likely coming from Hana’s Kitchen. There, chefs craft Eritrean and Ethiopian dishes, including a variety of vegetarian specialties such as shiro— homemade ground beans cooked with hot-pepper sauces, tomato, garlic, and olive oil. Poultry and beef creations, meanwhile, anchor the carnivorous side of the menu. For a dish called zelzel tebsi, chefs sauté strips of tender beef with butter, onion, and green peppers to coax out rich, hearty flavors.
