Marinated pork al pastor spins on a vertical broiler, waiting to be sliced and wrapped in tacos balanced by a sprinkling of diced pineapple, onions, and fresh cilantro. These tacos, along with banana-leaf tamales stuffed with Oaxaca cheese and roasted chicken, have become customer favorites.
