Such a fun class! We received a mini lesson on the production process, a tasting of a variety of chocolate types, and a great hands-on experience making ganache truffles to take home.
My boyfriend is apparently a super-efficient truffle maker so Claire let him use some extra ganache while those of us left in the dust caught up.
Claire is good-natured, thoughtful, and made the small class size (5 people) comfortable. Sorry to hear she's moving out of Washington!
It should be more hand's on.. and it should be longer.

SUCH an amazing class! Very small class size, lots of great information and education and the chocolate making process was a ton of fun. Claire was a fabulous instructor and made the class very fun and personal. I definitely plan on bringing my family and friends later on!

Claire's kitchen is around the back off of Aurora. The neighborhood may look a bit sketchy, but the confections are real and delicious.
Claire is super sweet and the class was a great introductory for chocolate lovers. The history of chocolate and learning how everything is processed was very intriguing. Playing around with the ganache was a lot of fun for me and my boyfriend. I would highly recommend this for a beginners course.

Claire does an awesome job with this class. She has a strong educational piece (now with pictures!) and goes over the process from cacau fruit to the chocolate you have in front of you. She explains tempering, characteristics of different chocolate types, and different chocolate products (cacao nibs, cocoa powder, etc). Then she shows you to make ganache and you make truffles! Lots of fun. Highly recommend.
