Famoso elevates the classic pizzeria to the level of fine dining with its menu of Neapolitan-style pies and fire bread sandwiches topped with artisan ingredients. Chefs start with tomatoes imported from Campania, hand milling them into their own house marinara sauce. From there, they use fior-di-latte mozzarella made from 100% Canadian cow's milk, and hand-torn basil that releases its flavors into the cheese. They then add a slew of toppings—think cracked coriander or oven-roasted Italian sausage—before flash-baking the whole thing in a wood fired oven for 90 seconds and a searing 900-degrees Fahrenheit.
