He crafted his treat using ossa dei morti Italian cookies, apple cider, black licorice, and ricotta salata, and the judges awarded his creativity. Now at Avenue Bistro Pub Verona, DiIonno crafts similarly inventive New American cuisine.
He churns out tuna tacos drizzled with wasabi mayo, lobster burritos complemented by creamy avocado, and chicken milanese topped with argula, goat cheese, pine nuts, and cranberries. During brunch, DiIonno whips up Crabby Patties—english muffins topped with crab cakes and remoulade. In warm weather, he sends his dishes out to the restaurant's dog-friendly patio.
