A lot of time goes into creating one of New York Bagel Cafe & Deli's bagels. First, bakers create the dough using powdered barley malt, then they rest the bagels for 12 hours on fermentation boards to help them develop deep flavors. Next, they boil the bagels in kettles before finally baking them in a hearth. The boiling is an essential step, as it results in a thick crust and a chewy texture.
