Steaks and apple pie have come to be expected at White House state dinners, but when President Obama welcomed Mexico's President Felipe Calderón in 2010, he knew exactly who to call. Chicago's Mexican cuisine authority Rick Bayless flew in to prepare––amongst other dishes––a green-herb ceviche and a 28-ingredient Oaxacan mole for the event.
