A smattering of herbs and spices—including coriander, garlic, and ginger—help transform pieces of chicken and cauliflower into classic Indian dishes. Also helpful are the special Indian woks and clay ovens that cook cheese cubes submerged in a tomato and onion cream sauce and skewered pieces of marinated shrimp and lamb. Chefs then plate the food for individual entrees, or fill trays for the lunch and dinner buffets. Alternatively, customers can have meals delivered right to their front stoop via the eatery’s squad of storks.
