Starting with the classic street food, chefs take traditional flour or corn tortillas and weave in gourmet flourishes with a dash of international flair. In the Milanesa chicken tacos, hand-battered fried chicken anchors bright pops of flavor introduced by fresh pico de gallo and the earthy bass notes of roasted poblano crema. The Gringo beef tacos, on the other hand—with their classic blend of ground beef, lettuce, tomato, and sour cream—prove that gourmet food isn't always about the bells and whistles.
