A rustic green sign hangs from the brick exterior of Haute Chocolate, hinting to passersby that the store’s delicate truffles and fresh-baked pastries have roots in an old-fashioned style of preparation. Store owner Jiliana Dulaney hand-makes all of her confections from scratch, calling upon fragrant essences of bergamot to flavor earl grey tea truffles and fresh-ground coffee beans to spike her italian-espresso candies with a jolt of caffeine. The passionate chocolatier also extends her talents to spongier regions of the dessert spectrum, dodging dive-bombing bees as she infuses cupcakes with freshly pilfered honey and lavender. Slices of flourless chocolate cake and cherry green tea sugar cookies line the store’s display cases or pile into large boxes to be sent to catered parties.
