Many a Washington apple is perfectly safe and fine to eat, yet never makes it to stores because it's too small, or too ugly, or even too big. But that doesn't mean it'll go to waste; when sent over to the loving care of Locust Cider, its juice will be squeezed out and transmogrified into a delectable variety of hard cider, such as dark cherry, vanilla, or honey pear.
That process, spearheaded by brothers Patrick and Jason Spears, involves cold-fermenting with carefully selected yeast strains, always for several weeks in order to preserve the fresh fruit flavor, before adding complementary flavors. And when the ciders are deemed smooth and drinkable, they're available for tasting and purchasing at Locust's tasting room—at least 12 varieties on tap at all times. And as customers sample the ciders, they can rest assured that they're contributing to a good cause.
