Check out Salud's menu, chock full of antojitos like empanadas & chimichangas, tacos with tilapia, puerco or carne asada, and specialty entrees like the red snapper, Salud fajitas or the chuleta de puerco. Just be careful not to wear one of those t-shirts that says, "one tequila two tequila three tequila floor!" They don't like that joke there. That joke is for an ill-advised Mexican themed frat party, whereas Salud is for the tasteful connoisseurs of tequila made from finest tequila cactuses in the world. Which begs the question... what makes a good tequila cactus?
Prize tequila cactuses are bred and raised much like those prize dogs that win dogs shows. Their needles are not prickly and sharp, but rather smooth fine hairs that the cactus groomers comb and tie into fine braids which fall gracefully down the cactus's sides. Contracted groomers fit the pure-bred cactuses with sweaters and accessories to give them each their own unique character and flare, which subsequently creates for each cactus a personal identity that is instilled in the tequilas flavor.
Cactus breeders coax the tequila out of the cactus by patiently and lovingly petting the cactus and stroking its prized braids. The cactus breeder has a profound respect for the prized cactus. Much like a dairy farmer milking a cow, the tequila milker says comforting things to the cactus, like "easy girl" and "slowly my love, slowly. Give your tequila to the world." Once the prized cactus feels sufficiently loved, a brilliant flower appears on the top of it's crown, and the cactus proceeds to give its fine tequila to the breeder. This is why they say the secret ingredient to a fine tequila is love.
