2 Lucho's Restaurant celebrates the Peruvian tradition of slow-roasting chicken on a turning spit. The founder's grandfather began developing family recipes as far back as 1970, serving his chicken in Arequipa, Peru; today, the owner brings those same flavors to Colorado Springs. Though all the chicken is spit-roasted, it doesn't necessarily get served whole. Rather, the meat is often incorporated into other dishes, such as the aji de gallina—pulled chicken in a creamy, spicy sauce—or arroz chaufa de pollo, a Peruvian fried rice with chicken, bacon, eggs, and green onions.
