What services does your business offer and what makes your business stand out from the competition?
Copper Caboose opened its doors at the corner of 4th Street and Boston Avenue in Lubbock, Texas, in 1977. We were the first restaurant in Lubbock, Texas to serve fajitas. Our long time customers have made us a special place to take the family for the last 25 years!

What is one of your most popular offerings? How is it prepared?
Fajitaladas have been a staple at the Caboose since we opened in '77. Fresh fajita meat wrapped in a flour tortilla smothered in queso served with 2 sides.

What was the inspiration to start or run this business?
To provide an environment that is enjoyable for both employees and customers alike. Also, to serve a higher quality Mexican food to the families in the surrounding areas.

What do you love most about your job?
The flexibility to make decisions and collaborate exciting ideas to further the business, from food to drinks.
