The 808 Bistro’s head chef wields Culinary Institute of America training and eclectic ingredients to craft a diverse menu of Italian-inspired dishes. At the start of each dinner, guests prime prize-fighting taste buds in fisticuffs with appetizers such as sea scallops served with tender asparagus, creamy goat cheese, and a mashed-potato sculpture of Don King. Then, they’ll partake in an ensemble of entrees such as a ginger-orange-marinated duck breast lounging on a shiitake-mushroom risotto pronounced “stunning” by M.H. Reed of the New York Times. Diners can also delve forks or pocket-smuggled mini-trowels into vegetarian pastas such as spinach and cheese cannelloni in a chardonnay cream sauce. Entree flavors meld with red and white wines hailing from South Africa, Italy, Argentina, and the United States.

At lunch, chefs stir classic penne vodka with whole-wheat or gluten-free noodles and deftly skewer barbecued shrimp adorned with passion-fruit glaze. Wraps fill hands with savory grilled sausage, peppers, and onions, and competitive cutlery users challenge each other to fish the most lobster and shrimp from lakes of baked mac ‘n’ cheese.
