When Afghanistan native Abdullah Hafizi and his family came to Canada more than 12 years ago, they felt welcomed into a new world of opportunity. However, prejudice also underscored the new setting, so the Hafizis decided to communicate the positive elements of their homeland through a universal medium: food. At their restaurant, simplistically titled Afghan Cuisine, halal-butchered meats raised in Saskatchewan fill lamb stews and stack onto veal, chicken, and beef kebabs, which are served with saffron rice and roasted tomatoes. The kitchen crew prepares each dish with olive oil or trans-fat-free oil and cultivates fresh yogourt for a creamy counterpoint to some rich recipes. Decorative vines and photographs fill the cozy dining room, and a tapestry woven with flowers and cosines hangs on a wood-panelled wall.
