AG Inspired Cuisine’s executive chef, Cory Linkson, has cooked in some beautiful settings. As his career has taken him from the Canadian Rockies to eastern Quebec’s Château Montebello, he’s taken notice of not just the landscape’s scenery, but also its produce. Upon returning to his Niagara roots, Linkson resolved to build AG Inspired Cuisine’s menu around the changing of the seasons and his relationships with local farms. Today’s Reserve selection invites you and a guest to savor a bit of that local flavor with a three-course dinner for two. For each person, dinner includes the following chef-selected courses:

Because availability drives innovation for Chef Linkson, his signature three-course menu changes often as he finds and incorporates as much local produce from Niagara region farms as possible. Classical French techniques form the backbone of his approach to those ingredients, such as using reductions to naturally pump up the flavor of fruits and vegetables.
In AG Inspired Cuisine’s dining room, the only hint of the farm you’ll find is on the plates—it’s a sleek, intimate space of pearlescent whites and lipstick-glossy reds. It’s not hard to see why Niagara Life Magazine called it “one of the most romantic restaurants in the region,” especially during occasional bring-your-own-moonlight nights.
