Executive chef Jorge Adriazola crafts a menu of sophisticated American entrees amid an elegant ambiance. A posse of appetizers jump-starts the meal, unleashing coconut shrimp ($13) in a passion-fruit sauce and tender barbecue baby back pork ribs ($12) rubbed with Szechwan spice. Drizzled with lemon-butter sauce and kabayaki, the charred Danupa butterfish ($26) arrives to plates freshly caught from a long run of vandalizing fishermen’s cars. The chef prepares braised-pork pot roast ($20) with a glazed brandy-pineapple sauce and wrestles with circus folk to snag roasted peanuts for the fire-grilled filet mignon ($28).
