A simple scan of the menu reveals that Amato is not your average pizza place. All of their specialty pies reflect the calculated palate of chef Gino Amato, from the spinaci's mild pesto sauce and spinach offset by sharp feta cheese to the polo loco, a minimalist blend of tomato sauce, chicken, red onions, and broccoli. The fresh—and abundant—ingredients bespeak a loyalty to authentic Italian traditions, a trait that emerges in the rest of the menu as well. Knowing that people can't eat pizza at every meal unless it's Christmas, Amato also serves pasta, paninis, calzones, and veal parmigiana.
