Coquito’s chef, Moises Vidaurre, blends worldly travels as a member of the U.S. Navy with training at the Le Cordon Bleu College of Culinary Arts to craft a menu of traditional Italian dishes. The antipasti menu touts the calamari grigliato, whose squid steep in extra-virgin olive oil, herbs, and red-pepper flakes before sizzling on grills and being served on a bed of sautéed spinach. Atop the parma bruchetta, goat cheese and prosciutto di parma comfort broken artichoke hearts. Pasta ripiena selections showcase raviolis flavored with homemade stocks and packed with rough-chopped ingredients, such as braised beef, root vegetables, and a blend of asiago and parmesan cheeses. Customers who opt for pasta dishes can plunge forks into the lasagna's ricotta cheese and bolognese sauce or carefully peel apart its layers to liberate meat from its pasta prison.
