Antonio's A Taste of Mexico
Antonio Matus is a man perfectly poised to run a Mexican restaurant. Besides earning his degree in Restaurant Management in Veracruz, Mexico, he spent 17 years working in the restaurant industry in locales such as Cancun, Xalapa, and Austin, Texas. During that time, Antonio learned the restaurant industry inside and out, and also enhanced his knowledge of regional Mexican, New Mexican, French, and American cuisines.
Today, Antonio has spent more than a decade at the helm of his Taos eatery, which is best known for its award-winning red chile, and its zesty jalapeno-watermelon margarita. While the culinary team whips up Mexican classics, like tacos and burritos, they also get creative with unique dishes such as blue crab cakes doused in spicy tomato sauce or Navajo Indian tacos, made with fry bread in place of a tortilla.
