Bacco Trattoria and Mozzarella Bar
Most 14-year-olds spend their days dreaming of turning 16. But not Marco Monnanni—by the time he reached that age, he was already crafting handmade pasta in a Roman restaurant. The young chef later took his culinary education on the road, gathering new skills in Italy, Switzerland, Germany, and the United States. Now the executive chef at Bacco Trattoria & Mozzarella Bar, Monnanni brings the rich flavors of his homeland to a menu brimming with fresh, local ingredients.
The pasta that started it all is prominently featured here, from the seafood-laden spaghetti allo scoglio to papparadelle al cinghaile with wild boar ragu. Mediterranean classics such as mushroom polenta and pollo parmigiana are also available, as are rustic pizzas topped with prosciutto di Parma, arugula, and piquant basil. But perhaps the most tempting culinary offering here is the mozzarella bar, where creamy, just-made cheeses can be paired with condiments including organic roasted peppers and green tomato marmalade.
