When Euripides Pelekanos started offering burgers out of the tiny kitchen of his underground music venue, he didn't have plans any grander than offering his patrons the kind of food he liked to eat: patties of delicious, organic, locally sourced meat. Soon, though, the burgers became as popular as the music and Pelekanos realized that he wasn't alone in his preferences. Together with some hometown friends, he opened the first Bareburger location in their native Astoria, bringing the same local mentality to its construction by using reclaimed wood, salvaged bar siding, and lighting fixtures taken from vacation neighbors who weren't using them.
Today, each Bareburger follows the same philosophy, with diners digging into hearty grub at tables made from storm-salvaged trees. In addition to the pasture-raised, antibiotic- and hormone-free beef patties, cooks also grill up exotic proteins from beasts including wild boar, elk, and ostrich. After a quick kiss of the flame, these juicy meats come to rest on a bun piled high fresh veggies and savory cheeses. Vegetarians can join the fun as well, with such meat-free options as quinoa patties mushroom burgers.
