Classes are held at Norfolk Street United Church and are scheduled for the evenings of November 28 and 30, and December 5, 7, 12, 14, 19, and 21. Classes are limited to 25–26 people and fill quickly, so it is recommended to reserve a space as soon as possible.

Contributing her expertise to the Halogen television network, green chef Renee Shaidle specializes in raw food, pillaging local grocers for seasonal organic produce to create dishes intended to revitalize the body. In each festive 2.5-hour class, Renee teaches all walks of eaters how to coax flavours and holiday spirit from unprocessed, regional, and organic vegan ingredients. Using raw food items, Renee guides novice dessert-makers to craft tiny apple pies in cupcake tins, Christmas coconut cake dolled up to look like it’s flirting with a snowman, and chocolate-mint power balls coated in raw chocolate, coconut, and pistachios. Power-packed with digestive enzymes, proteins, fibre, minerals, and vitamins, the desserts boast so many nutrients that Renee recommends students eat them at the beginning of a meal, as opposed to during the apocalypse.
