In each festive 2.5-hour class, Renee teaches all walks of eaters how to coax flavours and holiday spirit from unprocessed, regional, and organic vegan ingredients. Using raw food items, Renee guides novice dessert-makers to craft tiny apple pies in cupcake tins, Christmas coconut cake dolled up to look like it’s flirting with a snowman, and chocolate-mint power balls coated in raw chocolate, coconut, and pistachios. Power-packed with digestive enzymes, proteins, fibre, minerals, and vitamins, the desserts boast so many nutrients that Renee recommends students eat them at the beginning of a meal, as opposed to during the apocalypse.
