At some point during his 15+ years in the restaurant industry, Darren Byrd earned an epic nickname: "Big Country." So, when it came time to name his new restaurant, he went with the term of endearment that reflected his years of hard work and the barbecue he made so well. His eponymous restaurant lives up to its name; here, the "Big" comes through in the massive platters of Texas-style barbecue, with pulled pork, ribs by the rack, and burnt ends made with locally-sourced meat and family recipes. The "Country," meanwhile, comes through in the extras: sweet tea and sides of homestyle staples, from potato salad to collard greens. Really, there's only one element of the eatery that Darren's nickname doesn't cover: the food truck, whose team serves Big Country's meals at art walks, cultural festivals, and catered car chases throughout Denver.
