My husband and I had a great time with Big Jim and especially his BBQ. The food was great the atmosphere was fun and the info was beyond worth the price. We wish there was a restaurant we could go to for this food everyday.

A lot of good tips for the experienced BBQ person. Injecting the meats has greatly improved their flavor. Your pulled pork recipe is the best I've ever made. Many of the recipes in the cookbook need better explanations/instructions.

Classes are held every Sunday and some Saturdays from 11 a.m. to 4 p.m. at Barbeques Galore.

Fusing contemporary barbecue trends with southern traditions and recipes, Big Jim's BBQ's competition-level class teaches the charcoal curious the ins and outs of commanding a grill. Helmed by award-winning pit master Jim Modesitt, the class walks fledging grillers through the preparation steps behind barbie basics such as baby-back ribs and pulled pork as well as flame-broiled seafood such as salmon, shrimp, and crab cakes. Using the provided ingredients and supplies, barbecuing greenhorns learn mastery of charcoal grills, gas grills, smokers, and dragon’s breath, as Jim teaches them the intricacies of injections, dry rubs, marinades, mop sauces, brines, and homemade barbecue sauces. After class, grilling graduates can take home feasts featuring the meats of their labor or bask in the glow of mastering the earliest form of cooking.
