Championing his unique style of San Francisco barbecue influenced by Southern cuisine, award-winning competitive grilling master Jim Modesitt teaches intrepid carnivores the art of slow, savory cooking. Throughout the five-hour class, students learn to roast meats and forge iron-scissor tongs in the sacred flames of charcoal grills, gas grills, and smokers. Under Jim's watchful eye, chefs steep everything from chicken, salmon, and shrimp to rib-eye steaks and filet mignon—included in the cost of tuition—in sweet marinades, homemade barbecue sauce, and savory brines and dry rubs. After class, graduates can bring their freshly cooked meals home, along with a rolled-up napkin to frame and hang on their office wall.
