In your own words, how would you describe your menu?
Authentic slow smoked in a blend of Oak and Hickory. All of our rubs, marinades and special menu items are of our own creation. We prepare and cook all of our meats daily.
What is one of your most popular offerings? How is it prepared?
Chicken tacos is one of our best sellers. Tender chicken breast marinated in our special blend then smoked to perfection. Served on a warm tortilla with Cheddar and Monterey Jack cheese, spring mix lettuce, tomatoes and topped with our homemade Cilantro Aioli sauce.
What’s the best reaction you’ve ever gotten from a customer?
Customer asked me to change the name of one of our items to “Damm Good”. At the first bite he was very pleased and impressed about the unique flavor of the meal.
Black Market Ribs
Juan Rios and Courtney Conner came up with the idea for Black Market Ribs after making an important realization: there aren't many catering services or food trucks dedicated to smoked products. So they teamed up and started their own food service, building a menu around authentic smoked foods. Their spread includes half and full slabs of ribs, pulled pork, brisket, and chicken, all of which can be ordered by the platter or packed into sandwiches and tacos. The menu also features sides, from pasta salad to mac and cheese crafted with gouda and cheddar.
