Blooming Beets Kitchen
Before she was the chef at Blooming Beets Kitchen, chef Iva Paleckova loved junk food. Her current dishes show how thoroughly she's given it up. Not only does she shun French fries—she's given up gluten, grains, canola oil, corn sugar, and, for the most part, butter, preferring to use avocado, coconut, and olive oils in its stead.
Despite their health-conscious spin, Iva's dishes remain down-right mouth-watering. For brunch, she and her team make hash from mostly-organic veggies, wrap dates in bacon sourced from sustainable farms, and drizzle grain-free pancakes with rich caramel sauce. At dinnertime, diners feast on such items as grass-fed beef burgers and coconut-wrapped chorizo burritos, and can even reach for a gluten-free beer to wash it all down.
