Blue Diamond Buffet
The chefs of Blue Diamond Buffet pair meats and vegetables with spicy and mild sauces to celebrate the flavors of Nepal, China, India, and Thailand. A traditional clay oven cooks marinated chicken, lamb chops, and salmon, which piles into curry accented with mustard seeds, ginger, cockscomb flower, and crushed fenugreek leaves. Guests can order individual entrees from the extensive menu, or ladle helpings of many dishes—including fried rice and noodle bowls—onto their plates during trips to the buffet.
