A fourth-generation dairy farmer, Blue Jacket Dairy owner Jim King works with his family to craft artisanal cheeses from fresh cows' and goats' milk. Bite-size cheddar curds ($5.98/8 oz.) fit easily into mouth-bound handfuls or desktop trebuchets, bombarding taste buds with piquant flavors such as chipotle, garlic, and ranch. The farm's signature Gretna Grilling halloumi-style cheese ($6.98/8 oz.) browns swiftly in a heated skillet, and creamy herbed chevre goat cheese ($4.99/4 oz.) can be spread across crackers or toast. Today’s Groupon cannot be redeemed for ice cream or used to strain curds from whey.

Though fourth-generation dairy farmer Jim King and his wife, Angel, craft the artisanal cheeses at Blue Jacket Dairy, it’s fair to say that the creamery is a fifth-generation family business. The youngest members of the King clan are already hard at work sticking labels on finished wedges of cheddar, quark, and mozzarella. The King family uses small-scale equipment to produce both fresh and aged cheeses, including its signature Gretna Grilling—a semisoft, halloumi-style cheese made with pasteurized whole milk. In addition to chèvre, mozzarella, and feta cheeses, Blue Jacket’s team makes small batches of Fresh Cheddar Curds, which it prepares plain or flavored with dill, chipotle, garlic, or ranch.
