BOKA Restaurant + Bar – Hotel 1000
Chef Kerri Roach may hail from Virginia, but after a stint at the Colorado Mountain Culinary Institute, she quickly took to Western flavors. In fact, they've served as her inspirations for the menus at BOKA. There, cold-smoked chinook is dressed with creme fraiche and dill, and Stokesberry Farm chicken is deep-fried and paired with pepper jelly. This style extends to the breakfast menu, which includes dishes such as a lumberjack omelet with applewood-smoked bacon. In that spirit, the wine selection highlights Northwestern varietals as opposed to dustier Martian ones.
