While brand new Chef Jennifer Krascella draws from an arsenal of authentic Mexican ingredients ranging from pico de gallo to Mexican crema, the bartenders primarily depend on only three ingredients: lime, salt, and tequila. Pulling from shelves lined with various tequilas, they fill shot and margarita glasses with the south-of-the-border libation to complement Chef Krascella's tequila-spiked fish tacos and porky pig burritos stuffed with barbecue pulled pork, Mexican-style crema, and spicy black beans. With its new ownership, Cabo Tequila Grill treats its guests to a fresh menu, full of Mexican treats such as cilantro beef and mojo chicken fajitas, as well as American burgers loaded with garnishes such as brown sugar and red onion jam, onion rings, and zesty slaw.
