Every morning, Cachito de Mexico’s chefs rise before the sun to prepare fresh tortillas. When the clock strikes 6 a.m., the doors swing open, revealing an expansive dining room where the rising sun lights up colorful booths, red chairs, and vibrant Mexican paintings. Throughout the day, servers parade out of the kitchen, balancing the authentic dishes from the San Luis Potosí, Chihuahua, and Jalisco regions that have won the restaurant praise from gastronomes from the San Antonio Express-News.
