Caña Cuban Parlor Oakland
The chefs at Caña Cuban Parlor Oakland explain it best on the cover of their menu: "If you sat five Cubans down," they say, "and asked them all how a certain dish should taste, you would probably get five different opinions on how that item's flavor would best represent Cuban cuisine." At their restaurant, they decided to make the tastes their own by focusing on three sauces: the sofrito—redolent with tomatoes and bell peppers—the herbed garlic mojo, and the lime-laced salsa verde, which is not dissimilar to chimichurri.
Once they settled on this trio of flavor profiles, the kitchen team was ready to start. Inspired by the organic farms that populate their region of California, they devised a menu that hinges not only on authentic Cuban recipes and their own ingenuity, but also on local, seasonal ingredients. A few of the results: ahi tuna crudo, served with mango, seared Angus Hangar steak, brined and served with yucca, and brunch's layered plantain soufflé, with bacon, a poached egg, and chimichurri. For some, however, Caña's biggest draw is its selection of liquids, which includes top-shelf liquors, inventive cocktails, and java made with Roast Co. Artisanal Coffees.
