The very first Carroll's to serve up rib-sticking fare to the city of Medford was a steel-car diner opened in 1930. The restaurant has changed a lot since then. Instead of blue-plate diner fare, today's Carroll's serves hearty steaks, barbecue ribs, and a suite of gourmet burgers, and it has a raw bar stocked with local oysters and clams. Instead of a slim, easy-to-transport eatery, it now has a solid brick-and-mortar location right on the Mystic River with a larger and more handsome dining room. But one thing hasn't changed. However, the institution is still run by a Maury Carroll—this one just happens to be the third. He's honoring the fine cuisine purveyed by his father and grandfather at the newest iteration of the restaurant.
