Hand-rubbed pastrami. Smoked turkey breast. Whiskey-braised pork belly. That's just a small sample of what you might find on the menu at Carve, where chefs are dedicated to building sandwiches and entrees using only the freshest of ingredients. Here, the team creates as much of its fare in-house as it possibly can, from the stock for its french onion soup, down to its pickles. But despite the old-fashioned commitment to quality, the menu is decidedly modern in its approach, yielding up dishes like pancetta-crusted baramundi with smoked tomato dashi, or vanilla bean, pecan-crusted cheesecake with blackberry whiskey sauce. As for the drink menu, the bartenders whip up a delightful assortment of craft cocktails, but also pass the reins to the customer with a "carve your own cocktail" option.
