Cebiche’s chefs forge authentic Peruvian dishes from recipes steeped in the country’s Incan heritage and peppered with a globe-spanning amalgam of Spanish, African, Asian, and European influences. Seasoned ground beef, raisins, and hard-boiled eggs form the eclectic nucleus of papa rellena, a stuffed-potato appetizer as hearty as an all-you-can-eat buffet’s laughter. A fleet of traditional ceviches totes a gaggle of seafood, such as the shrimp, squid, and octopus gallivanting through lime juice, peruvian spices, and marinated onions in the ceviche mixto. Bisteck a lo pobre accents fried steak with fried sweet plantains and eggs, and aji de gallina veils shredded chicken in a creamy parmesan-walnut sauce that trickles onto accompanying steamed rice. Crema volteada, a peruvian spin on flan, neatly wraps up culinary voyages, which can usually be prepared vegetarian or in full Technicolor upon request.
