No ovens. No grills. No fire-breathing sous chefs. The mixture of fish and shellfish known as ceviche cooks only through a citrus marinade, flavorfully accented with chilies, red onions, and cilantro. It is the signature dish at Cevich, and the from-scratch sauces here pack in plenty of flavor—from the quirkily named Lime n da Coconut, a coconut-ginger concoction, to the Greek-inspired, olive-laden Santorini.
Service stays fast and casual within the wood-paneled restaurant, where made-to-order ceviche dominates the menu. The ordering process starts with a choice of seafood, served solo or layered atop greens, rice, or quinoa in a bowl. Next, diners select one of the aforementioned sauced styles. For a change of pace, the chefs can also whip up tacos and burritos made with ceviche, pulled pork, or chicken.
