Randall Warder has had quite the journey through the culinary industry, from bussing tables as a teen to serving as executive chef at a five-star resort in Mexico to presiding as CCO of Romano's Macaroni Grill. Today, he brings his decades of experience to C'Viche & Tequila Bar, where he's helped develop a menu inspired by Mexican, South American, and Texan flavors.
There are tacos, of course, including one stuffed with brisket and salsa, as well as bar snacks such as street-style corn and avocado fries. The ceviche is the star of the show, however. Customers choose their preferred seafood, then they select one of six preparation styles. Tuna, for instance, can be transformed into poke with lemon, soy sauce, ginger, red chilies, and sesame seeds. These fresh, bright dishes are a lovely complement to the hand-selected list of Central and South American spirits like Argentinean pisco or Brazilian cachaça.
