Located in Franklin, Chef Paul's menu is a roll call of Cajun lunch and dinner staples. Like a fresh-water bikini, the two-piece catfish (lunch $9.99, dinner $10.99) was pond-raised and is always accompanied by two classic side dishes and hushpuppies. A house-made dark roux makes a cozy home for crawfish étouffée (lunch $10.99, dinner $13.99), good feng shui atop a well-made bed of rice. Spoons dive for andouille sausage in bowls of gumbo (lunch $6.99, dinner $8.99) and red beans and rice (lunch $6.99, dinner $8.99). For land-faring fare explorers, the pimento cheeseburger ($8.99) piles pimento cheese and smoked bacon atop a half pound of ground Angus. Louisiana's Abita beer ($3.99) is a pro at calming Cajun spice fires, as are Ball jars of sweet or regular iced tea ($1.99).
