Regular cooking classes cover such topics as making sausage, preparing pasta, and cooking with fresh herbs—a series of lessons on how to blend the potent flavor of certain plants with cheese, sauce, or even ice cream. In the knife-skills class, chefs teach students to cut, dice, and slice while preparing a grilled chopped vegetable salad in a country vinaigrette, a chicken tortilla soup with avocado and cheese, and grilled pineapple skewers with toasted coconut.

When other kids played in the street, imagining lives as astronauts or cops, Leslie McKenna played in the kitchen, already a chef in her heart. Her childhood passion persisted, earning her a degree in Culinary Arts from Johnson & Wales University, praise in the pages of Bon Appétit for her pastas and desserts, and a job as Bob Hope’s private chef.
