If the Chicago Distilling Company feels a bit like a gritty workshop, that's because it is. The Company's still sits in plain sight and its exposed brick walls and loft-like ceilings evince a sort of blue-collar aesthetic. "[We] wanted it to feel almost like a garage. A place where you felt like things were being made, or fixed," co-owner Noelle DiPrizio told Groupon. But the hands-on ethos isn't just for show. The distillery's spirits are handmade from Illinois grains and often follow recipes passed down from Noelle's grandfather, a distiller himself.
Visitors can set off on an all-encompassing tour of the 4,400 square-foot facility or simply sample cocktails showcasing their house-made spirits. Often the liquors' names are as locally sourced as the ingredients. For instance, the Ceres vodka is named for the Roman goddess whose statue is perched atop the Chicago Board of Trade to scare away any birds looking to steal stock tips.
